I recommend reaching out to the Product Support through their website at https://support.garmin.com. Garmin staff rarely intervenes here on this forum.
With your link to support garmin you cannot do more for garmin connect. This link is working for a watch.
To report bug for a watch you can go thru Garmin Secure File Upload. I tried this with PDF report.

In most regions, you have usually three options where you can report any kind of issues, including bugs - phone call, online chat, or email.
In French version, chat is not available (there is a button when you click -> not available), I did not find mail option and only call is available. Anyhow, for the second day Garmin Connect iOS reports properly the week day. The day name is aligned with date and activities. let's see if it is confirmed.
Yes, but I use GC v5.1.0.21, the latest available for iOS v15. You may have a newer version, if on a more recent iOS

It looks like solved now. This was exactly the same bug as Beta, running on the focus card, days in wrong order - Garmin Connect Mobile iOS - Mobile Apps & Web - Garmin Forums.
