My watch said I got my steps but later says I missed my step goal, I think it could’ve been due to being next to Canadian towers that day. Is there a way to update my steps on this day to get my goal and over 300 day streak back?

You can set the time to the manual mode, change it to a time before midnight, doing some extra steps and syncing again. Then changing the time back again. I do not remember if it is necessary changing the time both on the watch and on the phone. Possibly it may be enough on one side only, but if you want to be sure, change both of them.
Plese note that the time for the change is very limited, since you cannot change the date on the watch, only the time. You may be also able to change the Goal retroactively even if you cannot add any more steps - see the following thread for detailed instructions:
