If you are seeing a different VO2 Max value in Garmin Connect than what is shown on your device, please post a screenshot/photo of each, showing the discrepancy.

It seems isn’t updating the running Vo2, just other activities.

We made a backend update to Garmin Connect around December 20th. If you export (from Garmin Connect to your computer) your last 7 runs after November 27th, then delete those 7 runs from your Garmin Connect account, then import them back into your Garmin Connect account (from where you saved them on your computer), that should resolve your issue.
If this does not resolve your issue, please start a new thread in the Garmin Connect Web forum.
