I have had the watch for about a month and normally use it when hiking and MTBing. Have noticed it not fully recording the correct distance travelled. My wife and I just completed a ride. She recorded hers straight from the Strava app. Mine was being recorded on my Garmin Epix. Mine showed 25kms while hers showed the correct distance of 40kms. The map of the activity looks exactly the same yet mine recorded almost half the distance...any ideas? Is the watch faulty?

The course is 39 km and you got 26 km so there is something odd.
Do you have a wheel sensor on the bike that you've paired to your watch? Maybe it is sending the incorrect distance to the watch…
The same problem happens when I am riding the analogue bike.

No, it should not. The GPS is used only when no wheel sensor is available.
The sensor of the eBike is connected to your watch:
Make sure you calibrated it properly. Either have a look on the watch, in the menu Sensors & Accessories, and calibrate it there, or read the manual of your eBike - there may be some additional instructions. The watch by default uses the "auto" calibration, but it may not always work. It is safer to enter the true circumference of the wheel.
