Select the activity directly from your watch - Recording a Timed Activity
This is what I tried but unfortunately it doesn’t show me any other activities apart from running (swipe does not work). Any suggestions? I deleted the app and made a software update of my iPhone but nothing helps..
It's on your device, so updating your iPhone app has no impact. When you say "swipe does not work" does that mean nothing happens? If not, then maybe you have a defective device.

And yes, I did enable all activity options via the app.
Any idea why this is the case? In the garmin App, activities are enabled and move IQ and Auto Start is selected. Yet I can neither chose the activities via the watch, nor does the watch automatically detect walking, cycling etc..
If swiping left is doing nothing, and the app is setup correctly, then perhaps you should reset the watch and start over.
Restoring All Default Settings
If problems persist after that, then this could be a hardware issue and you need to contact Garmin Support
I had this as well when I got my watch, did a factory reset to resolve it.
