Anyway of recording this on my Vivoactive 3 I can’t find it anywhere or do I just pretend I’m in a pool?

There are some third party apps that may work, but OWS is something that's really only on higher end/Tri devices. There's more than just recording, in that GPS needs to be a bit smarter as the watch is under water and since the ANT/BLE signals don't do well in water, something like the batch download of HR data as is available on the HRM-Tri band.
Thank you appreciate this explanation
I saw a revue of various swim watches by DC Rainmaker and he used as a comparison a Garmin 935 fixed to his orange swim float/bag- anyone tried this? as it doesn't go below the water it records an excellent track for open water- I thought a cheaper watch would do the same especially if it had the Open water App- any suggestions please (models?)
you can try this one perhaps
