What is the difference between steps and “Walking” on the Vivo 3? Do I have to manually start a “walking” when I go for a walk outside...or do I just rely on the “steps”??

Steps just count steps by using vibration and gyro like any pedometer, the activity Walking can track GPS, time "laps"/distance, calculate VO2 etc for a more complete data set, it can also calculate your "real stride" by using GPS distance / steps meaning you can later skip GPS if you just care about distance and save battery while walking.
You don't have to start a walk, steps work just fine but you get more data and can keep better track if you do select to manually activate walking
Hope that helps.
