Multitaking, running activity and stopwatch at the same time?

Hey guys, I'm looking at buying the vivoactive 3 or 3 music to keep track of calories burned during fitness (weights and cardio intermixed).
I don't want to keep track of reps or weights, but I do want to use my watch to keep track of the rest time between sets. So I have two requirements that I hope the vivo 3 satisfies:

- Can I run a stopwatch(app) simultaneously to an activity? (recording heart-rate and calculating calories), or do I have to stop an activity every time I want to start a stopwatch?
- Does the heart-rate recording and cal. calculation become more sensetive during an activity? (samples per minute for heart rate), or do I get the same results for the 24/7 heart rate setting and is the only upside of starting an activity the fact that this activity will then appear on a timeline somewhere?

Also, I realize that none of the existing activities will probably track well for my use-case (mixing weight lifting and cardio more or less randomly throughout the hour) so I'm just hoping to create a custom activity that simply tracks heart-rate and calculates 'calories burned so far' based on this heart rate.
