If you keep the watch under your swimming cap, then select "Other" with GPS set to on.
And if you want to keep the watch on your wrist, then none of the available activities will work satisfactorily…

You can download trial version to see if it works for you or not. There is another free app which should do the same, but I hadn't had a chance to try it yet apps.garmin.com/.../822d7118-a687-46ce-83c4-514764400171
