I've successfully customized the watch face to show current pace, average pace, distance and total time. But I'd actually like to know what time it is . Is that possible?

When editing or adding a data field for an activity my 945 has an option for "other" and then "time of day" if you have more than one field on that screen. If you select a single field, I believe you'd select "clock". It should be the same with the 645.
I think not on the same data screen. As you have written before 4 fields is max. You would need to add a ata screen. Go to activities (top right button). Select "Run". Long press middle left button. Select "Run Settings". Select "Data Screens". Scroll down to "Add new". Scroll and select "Clock"
You can scroll through the data screens with the down or up button. You can also find data fields that let you put in more than 4. For example, I use RunnersDreamRound, which displays multiple data fields, and has the time on the very bottom.
I had no idea that you could install Data Fields. The more I learn about this (and I guess all Garmin) watches - I am both impressed at what's possible but also disappointed in how unintuitive a lot of this is.
It does take a bit of playing around to get the full power of the watch. You might want to search for some videos about it (e.g. DC Rainmaker, or Garmin on YouTube). Also look through the developer section on the forum, and through the app store.
Yeah, will do. I ended up using this DataField - https://apps.garmin.com/en-US/apps/849f7ae0-7e2f-4313-8226-6e5e41fa1f98#0 Gives me what I want. Now I have to find one I like for Biking.
