I am assuming that you prefer to have one course for the entire multi-day ride, but will record each day's track separately? In theory this is possible. Just load it each day, and after tapping [RIDE] at the bottom of the screen, tap the "x" when it asks if you'd like to navigate to the beginning of the course. I say in theory, because depending the on the length of the track and the number of "points" in the track, the 1030 will not be able to process it. There is a max limit on the number of points a track can contain.
Or....
If you prefer one single large recorded activity, just press the start/stop button at the end of each day, and then power the unit off, and plug it in to recharge it (to a wall charger, not to a computer). The next day, power the device on, and then when you're ready to ride, press the start/stop button and start recording again. Again, in theory, this would work.

If you wish to record one single activity with each day's route being separate, just load each day's route in the morning of each day by going to the home screen, and tapping the Navigation widget, then Courses -> Saved Courses -> xxx xxx. Where xxx xxx is the course name for that day, you can load a course while an activity is recording, and the device will calculate it.
I do this all the time. After day1 stop, save the ride and shut0down the Edge. On day2 boot it, reload the course and start. It will quickly figure where it is on the course and continue from there. Dot not select to navigate to the beginning of the course, of course. I often use multi-day courses that way with no problem at all. Each day I stop and save the ride and restart fresh the next day.
