It looks like you just need to place the gupdate.gcd file of the firmware you want into the \Garmin folder.

The problem is preventing the unit from upgrading later. One idea people had was to fill the free space of the disk (which might have been more practical on units that had a small amount of primary space and used microSD cards for maps).
there is no way to change fw version in order to trick GC that you have an larger verssion? like 9.51
