You can edit that directly in the settings of the respective activity
I cannot find AOD settings in an activity only settings about screen is touch lock an touch on off
If you select the activity you want to customize by pressing the start button, select activity, scroll down to Run Settings and select the power mode, then back out of that and scroll to watch settings while still under that specific activity. You should be able to disable the Always On there.

Hey! Is this happening while wearing the watch on your wrist? I believe the watch turns the screen off after detecting that you aren't wearing it. Not sure if that could be the case ^^
Yes, it is the same in wrist as well. And as you can see, watch incorrectly detects HR from my bed (!), so it thinks it is on wrist anyway.
But it sound like workaround, not the solution.
