You cannot, since the watch recalculates and alters the suggested workouts every day. Just skip the workout you want to postpone and pick a suitable one from the suggested future workouts on the day you want to do the workout. (Or do a similar workout by yourself.)
But I kind of agree, it would be nice to be able to save a suggested workout for later and then schedule that for a particular day.
Thanks for your reply. Damn I thought since it's a plan you can reorder your workouts for the week, which would be super useful. I have one day where I have two workouts (run and strength) and then three empty days for the week, two of them being rest days, so it be nice to split the workouts more evenly.

At least for me, the strength workout normally moves to the next day automatically if you don't complete it (probably depending on the other workout scheduled for that day, if any). The plan won't schedule any workouts on the rest days, though.
There is one exception to the rest day rule - Garmin might schedule a recovery run on a rest day in the week of a planned race.
