For what it is worth, you can track your max heart rate in Garmin Connect. It is the max heart rate from your activities, not the estimated one. It makes more sense to me, though, if you ask me ;-)

But the plot I'm thinking of would probably lie more under the Health & Fitness section, since I'm interested in the User Profile -> Heart Rate and Power Zones -> Heart Rate -> Max. Heart Rate setting on the watch.
