How can I turn off touch mode while I sleep? thank you

There is a setting for this.On the Gc App

Choose Device > Settings > System> Sleep Mode > Do not disturb. 

Toggle On During Sleep

Edit the settings you want incl Gesture under Settings > Do Not Disturb

Yeah I realised that a while after I typed it..I checked just now and I cant find anything that does just the touch either...

it is not a bug, it is a missing feature, it should be setable (for everything , and with a button-combo you would be able to activate it back if you deactivated before) .

Yes, it is what I have done, but it is not the solution since in the epix, it came as default, in sleep mode, the touch screen did not work, there is no such option here
