Shortcut for switching on the (screen) flashlight

Are you sure about that? I think the first press takes you to the activity list, where the last used activity is pre-selected, and the second press opens that activity.

Is it possible that you're triple-clicking, so that the first 2 clicks open your last used activity, and the 3rd click is simply accepting the prompt for the daily suggested workout?

If I remember correctly, if you have just one activity type on your activity list, then pressing start directly opens that activity. And in that case, if you have daily suggestions on, the second press of start would start the daily suggestion.

You are right, I tried and indeed it works as you described. I even used it yestarday...

So if you click upper left button will that turn on the screen flashlight?

Two quick clicks (no pause between clicks) of upper left button turns on the screen flashlight. You can also set a hot key to do that or many other functions such as Garmin Pay.
