So for instance if I have increased my bench press over 8 weeks, will it show me that in a graph format at all?

You will have to enter your exercises with the number of reps and weight into each activity. Then you can see a graph for the reps and volume of your exercises.
You can use it in any way you like. For example if you like to follow your max in bench press you can add 1 rep and the weight. In that way you will see how your max in bench press develops over time.

Personally I wouldn't use Garmin Connect for tracking my strength training since it is a bit clunky and the graphs are not that good. I would use a spreadsheet so I can create any graph I like. You are also limited to the exercises that Garmin has added to the list and to those exact names.
