Another option is to use the "widgets" hotkey. You see the watch face, and from there you can use up/down and move to a widget that displays steps, or just set the watchface to display steps…

I fully share your opinion. I have been waiting for this for years but it has not been added to the list of built in datafields. As a programmer, it was easy to implement. Thank you for your nice feedback…
I don't think there is a native steps field that can be added to any activity. There are a few on the app store though so that might be your best option.
Another option is to use the "widgets" hotkey. You see the watch face, and from there you can use up/down and move to a widget that displays steps, or just set the watchface to display steps. That way you don't tie up one of the two CIQ DF's available.
You can turn "LAP KEY" to "OFF" in activity settings. This will revert the BACK key to take you to widgets.
On my old Vivoactive HR I could add steps to running and walking. Also the Hike2 counted steps, if I recall correctly.
jim_m_58 - Yeah, I did it that way.
Long press back will can be widgets even if lap key is on if the hotkey for widgets is set to that.
