Upon using this new 245 I’ve noticed the buttons seem a bit ‘crunchy’?!! The two on the right seem to have a second stage click that that doesn’t always seem to retract at the same speed - sometimes.
Is this just how they are or do I have a faulty unit?
if you always push them hard to full travel they always seem to work so I’m unsure if it’s not deliberate to stop you knocking them with the back of the hand?

That sounds accurate. Typically, we do advise rinsing your watch or soaking in in lukewarm water for 10 minutes to see if you continue to have this same experience. Typically, it will either resolve it or it will ensure the watch is working as designed. Even if it is a new watch we would still advise soaking it. So that’s how you fix it if it’s broke - unless that’s how it’s supposed to be
