ERG mode vs free riding?

I still trying to get use to the direct drive trainer. They talk about and ERG mode which means you can set power and ride. I assume that is the Power Mode in the Tacx App? I don't used Zwift or any online training. I just get on and ride. I so far just have used the Base Mode picking out a time amount. Is this the same as free riding. In general I would find the ERG mode a bit monotonous I like to vary the pace at times and do intervals. Is that technically possible without going to trainerroad or Zwift? I did do an FTP test and plan to do another one. I did one ride that was on the app in a City on China that was ok but really I prefer to just ride and look an the power and cadence. My usual cadence is 80-85 regardless of the actual speed as over the total ride it works out to that amount. Also, I don't stand to pedal it is an old habit with my wheel on trainer that really is best if you just sit. I feel off balanced standing to pedal. Can you just start riding an the trainer responds?
