1. My VA4 won't show as a device on my MacBook? 2. Is there anyway to retrieve a discarded activity?

Long story short - I accidentally discarded an activity I completed, is there anyway to retrieve this information/activity? Also, on a side note my Vivoactive 4 won't show as a device on my MacBook, it does appear and work with Garmin Express but I'm wanting to access the device through my computer so I can try some activity retrieval software?

That's probably because the VA4 is not a mass storage device, but rather an MTP device.

Not possible. Any file recovery software needs to work on the file system directly, and the VA4 does not give you direct access to its filesystem.
