Venu Sq 2 Stairs Stepper app does not track steps during a workout

If you are holding onto the hand rails while using the stair stepper, your watch will not be able to track steps. The accelerometer needs to be able to detect arm swing/motion. 

What I said was, there is no Step data field in the Stairs Stepper app. Can you confirm this omission?

Correct, there is no steps data field for the Stair Stepper activity profile.

That's really weird isn't it? A Stairs STEPper app that does not show you steps???
