There are several mathematical models to estimate body fat.
One method uses height, weight, age and gender. Garmin seems to use something similar to complement their impedance measurement.

The other method, the US Navy formula, which I believe is much more accurate, uses height and various body circumferences.

The most reliable method is still to scrape all the body fat off the body during a post mortem, but probably a bit too invasive for most of us.
