Is it possible to change the color of the line that shows the road
Yes, is it easy, maybe / depends, its a bit of a hack to the default MapTheme .kmtf files. These files control the color & transparency of various map elements.
https://forums.garmin.com/sports-fitness/cycling/f/edge-530/290989/how-to-make-course-line-easier-to-see (refers to the 530 but same applies to all x30, x40 and EE2 but not 1050) Scan at least the first page as this contains the core details, the rest just goes into further detail & experiment results
Depending on how you "navigate" the "line that shows the road" can be actually 2 o 3 lines overlayed. Excuse me if you know all this but there is the underlying actual road with a color depending on the road's importance & the maps "region", overlayed with the "calculated route, usually pinkish / magenta* (which can't be changed) and overlayed again by the "loaded" course line, usually a darker purple*, (this is on top and can be changed). If you have used the on device "navigate" to a location feature then there is no "loaded" course. How are you at XML editing? Most people find it easier to just learn to love the defaults?
Good Luck
*different people call the colors different names, the .kmtf files use "hex code" colors
