I have a very slow bike like yours, in fact all my bike are very slow, wonder if there is some other reason for the slowness? Anyway, removing auto pause will fix the recording issue, I have it always off and no problem with the record.
Somewhat related but I got a speed sensor paired to the EE2 through ANT+ (Garmin Speed Sensor 2) and it has greatly increased the sensitivity for auto-pause detection. Before it could take up to 8 seconds to auto-pause and then again after I left (depending on my speed) to resume recording. With the sensor it is a lot less. (I don't have the timings but it feels a lot snappier).
I haven't tested for sure but with the sensor I don't believe it would auto-pause if I'm not actually motionless (to a certain point).
