Note you're device will often think it's moving if it has a poor satellite connection. This is especially likely on your desk, unless your desk is outside! The recommendation is not to turn it on until you are outside.
If you want auto stop/start after manual initiation, then you can enable auto-pause, which is two pages up in the same manual.

you can also tweak the auto-start/pause speed. i have 6km/h set and seem to work OK, though GPS reception is key

To start a ride, I set it to prompt me rather than start automatically. That way, it always starts exactly when and where I want it to.
You can also hit the pause (S/S) button whilst stationary (coffee break etc.) and don't forget to hit start again when re-commencing.
