Is there a way to use Garmin Pay with the Edge 840? Would be useful, because I don`t wear my watch when riding.

no, there's not.
it doesn't have NFC chip. So it won't come with future updates

Why don't you wear you smart watch when riding? I even wear my Apple Watch when running and swimming. Apple Pay and the possibiltiy to reach third parties after an accident are reasons for this.
