No Watts displayed

I have both Speed and Cadence sensors on the wheel and crank. Both are connected to the Edge 830 and all data is being captured but NOT Watts. I have this displayed but it's the only field that's always blank. I thought this could be calculated using the included sensors and GPS.

I've been told I can only get Watts but purchasing a £600+ vector 3 pedal. Is that really the case? Should this metric not be available without?

Yes, only with real powermeter, there is no calculated "virtual" watts from speed and weight and grade on Garmin devices /hopefully!!!/ like on Sigma Roxs (which is totally an unreliable power data :) so dont be sad... ) There are cheaper power meters on the market, 4iiii , from ~ £300

If you don't have a power meter, you aren't going to measure power (Watts). You don't have to get vector 3 pedals; you could get Favero Assioma pedals (which are cheaper and easier to deal with). Yes. You need an actual power meter to get Watts. There are many available that will work with the 830. Vector pedals are one. If you upload your rides to Strava (paid subscription) they will calculate an estimated power.

there are a few CIQ app for older Edge units , like this : https://apps.garmin.com/en-US/apps/4f1ec7c5-6fd6-4d3e-a6ac-a7f568e567c1 , maybe it works on 830 also, or search for similar here : https://apps.garmin.com/en-US/search

but better to avoid them, You will get heavily inaccurate data ... (especially on flats)

Edge 800 computed watts without power meter using ant. Why won’t 830?

The Edge 800 did not compute watts without a power meter. None of the Garmin products do. Are you mixing watts and calories up?
