Say I've loaded a course in an area I've ridden before, I'd like to only see the loaded course. Not every single privous track. Is this possible and if so how?

Yes, your rides are stored on Connect even if they are deleted from the unit. Deleting the log files on the unit does not affected any rides uploaded somewhere.
This is really a test to try & establish how these tracks are still being displayed on the map after you've finished activities. I've never ever seen this across any edge device I've owned.…
No, I guess I could always make sure to delete them from the unit but that seems like a bit of a pain to be honest...
Would they still be saved on the connect server or do I remove them entirely if I delete them from the unit?
(Although I guess I could always get them back from Strava if I wanted to?)

You don't have to delete them you could connect your edge to a computer & move the activity files over as a backup if you like though they are stored in GC too it's just harder to get them back in bulk if for any reason you need to
I had the same problem and think I managed to fix it. If you go into your saved courses and select the ride that is causing the problem, there is then an option somewhere called 'always display' (can't remember how I found it now but its quite evident) - if you turn this off then the course disappears from the map. I must have turned this on when I was playing around with the settings, but once off, the course goes away.
The units can't handle having lots of activities on the device (I think the limit is 200).
You are going to have to delete to hem some day.

Could you provide a screenshot of what you are seeing? Are you seeing the blue track recorded from a previously saved ride or is this mapping information from the installed map?

Yes @Garmi-Blake, the marks are the blue ones from previous rides. At the old Garmins for car use there was a bottom to hide them but at the Garmin Edge 1000 I cannot find it.

I can grasp the issue you are describing, and understand it has been experienced by others in this thread, but this isn't something I've seen before.
It seems to have been solved, even though I haven't actively done anything. (Other then update through Garmin Express).
On the other hand I haven't ridden more then a handful times in the last 4-5 months.
