To the right of your post is a "Related" column that lists the first 5 "How do I disable the Virtual Partner" previous historical posts, there are dozens of others over the years. The VP is too central to a lot of things in Garmin software so is unlikely to even change, the traditional "fix" (?) is to set the VP speed very high so it races ahead and never seen again (that ride) or set the VP speed very low so you race away.... The on device VP speeds are not always helpful and confusing (an actual speed if no course and a % of previous or set speed for a course) but are in the "Controls" widgets (swipe down from screen top in touch interface devices, not sure for button devices). You can otherwise set the VP speed for a course in Garmin Connect Web or Mobile via the VP Speed setting for Courses originating via Garmin Connect or similar in many other course planners. I am sure you will come to love the VP ???

Go to Settings - Activity Profiles. Select the desired profile. Go to Data Screens. - Add New - Add Virtual Partner. Click the Virtual Partner. Set speed to zero. Turn Show on Screen off. That should at least make sure you won't be bothered anymore
