Is there a way to pair a specific sensor to initiate a specific ride profile?

Hey so I have 3 wheels with speed sensors on them (mountain/road/gravel)

What i would like to do is make it so that when the garmin detects I am moving over the preset speed threshold, I want it to automatically start a given profile based on which sensor it is talking to.

Is there a way to do this?

Wongataa is correct. The Edge will have a "pool" of sensors that it will search for each time you start an activity. Whichever sensor is activated by you moving the bike that correlates to that…

No. All the sensors go into one pool that is accessed by every ride profile. You need to select whichever profile you want to use.

bummer, are there any open sourcing/third party routes that any users might suggest for automation? This seems like a fairly straightforward thing
