Changing speed limit for auto start, lost sensors, connectivity and ride uploads without wifi. Please help!

I'll start by saying that this is the first time I have owned a cycling computer. I bought it mainly for creating gravel routes and also for the emergency incident detection in the event of a crash when mountain biking (I ride by myself a lot). Took a rough digger last week and cleared the incident detection warning, so that's good to know it works! But here are my issues and I'm hoping some more experienced Garmin users can help me:

Ride upload without wifi: I still cannot upload a ride to my phone when I'm done until I get back home and connect to wifi. Has anyone ever figured out how to change this in settings? I've checked forums, youtube, instruction manuals, etc and have come up short.

Lost sensors: the new update lost my speed sensor. Didn't realize that until after last night's ride. Also wouldn't connect my iPhone 10, had to remove device and reconnect. Essentially starting the Garmin Connect process from scratch.

The auto start speed: it currently shows that my threshold for the auto-start feature is 6 MPH. This is wildly frustrating since a lot of mountain bike rides have long, steep and slow climbs. Following a group of buddies last night, there were times where it would pause because we were climbing under 6 MPH. I try to change it to 3 MPH but it says "too low". Anyone figured out a way to change that feature? It tends to pause and start again once you get up to speed, which I think is changing my total distance and elevation.

Bonus high five to Garmin... Turning off the Jump Notification: the new update finally allowed me to turn off the "great jump!" beep. I ride a lot of jump trails and it was painfully annoying to hear that every time your back wheel left the ground. Fixed!
