1)  There will only be one speed reading in the Edge 130.  The Edge will seamlessly integrate the speed sensor into your recorded workout, it works great.  I highly recommend manually measuring the tire circumference to enter for the sensor by rolling out next to the tape measure on the ground.  This achieves the highest accuracy and is very quick.

2)  You can turn GPS off but then you won't have a recorded GPS track of your ride.  That would be up to you.

I also do not recommend pairing the speed sensor to your Garmin Connect app, only to the Edge 130.  If paired with the app it will create a new activity every time you roll the bike even a few feet.
