what and why do you wanna change? the Strava is reading out the device id from the original FIT file, so if you wanna see different device name there, you need to change the device id in the FIT file before the upload. For this, you need a spec software tool which is able to modify this value for any other which is specified in the device id list of Strava (otherwise there will be a blank "name" there). Better to forget it and just ride... :)
