Can I occasionally use my wife's Edge 840 computer without ruining her stats?

I am a casual cyclist but would like to try the 840 to see if it is of interest to my style of riding. IS there a way to unlink the device from my wife/'s connect account temporarily or would it require a device factory reset?

You could try disable auto upload then delete, or even just not even save the ride at the end. If you want the ride/file you would need to connect to a computer first and copy/cut it from the activities folder (making sure Garmin Connect doesn’t start)
