With my 830 if I let Garmin Connect create a route for me it takes me primarily on paved bike paths even when I select Mountain Bike.
If I upgrade to the 1040, will it create routes that are primarily on single track trails from Trailforks?

It seems to. If you go to "Navigation" and then "MTB Navigation" it will show all the local trails that it knows about and will automatically suggest routes of a given difficulty or length on the trails create a route on the trails. What it doesn't do, that I can find, is route from your house, for example, to somewhere else on the trails it there exists both a road path and a trail path. Also, if your house is the starting point for an MTB trail ride the route then goes in a straight line from your house (that is, not on roads) to the start of the trail system. I was doing a MTB ride today and half way through I asked the 1040 to route me home and it routed on the trails until I got to the trailhead and then the rest of the way on the road. It worked perfectly.
