Why does my garmin edge 1030 plus sometimes start recording a ride when its charging or on the bike whilst I am uploading a route?

Activity page appears when I haven't pressed the start button.

Your Edge does this because you have set "Autostartmode" to "automatic". The trigger speed (usually 10 km/h) is often reached while the device establishes a stable GPS signal (although you are not yet riding).
Solution: set "Autostartmode" to "prompted (10 km/h)".

Just checked, I have set that to prompted & 6mph?

That‘s what I have, too. My device sometimes beeps to remember me to start, but never starts from its own.
Strange...

Thank mcinner1, yes I hear the bleep & when I look it has started. Frustrating.
