Yes, a simple one - stop holding on the railing while stepping

The watch cannot detect any steps if it is not moving. Alternatively, use a footpod sensor, or attach the watch to your ankle, if you cannot exercise without holding on the handle bars.

I actually do hold the arms & work them too.  It doesn't record any steps, just time, heart rate and calories.

Well, it can be that the motion of the machine arms is not well detected (because it is limited and too smooth). Try attaching the watch to the ankle, to see if it helps. If not, try keeping it in the pocket (you'd need a HRM chest belt, though, in such case).

The cadence shows up in Strava, but not Garmin Connect.  The only data graphs I see in Connect is HR and temperature.  Since most people use ellipticals indoors, temperature seems like an odd data type to graph.

OK, just tried it. Indeed, the Eliptical Activity does not have the Cadence chart. In that case just change the type of activity to Treadmill in Garmin Connect, to look at the cadence. You have to reload the page, after the change. The graph shows up only after the reload. You can set it back to Eliptical, afterwards, if you prefer it in that way.
