I didn't know it had boat mode. Will this watch draw a map of my trip across water and compile data, like speed, distance, etc?

Yes, regardless of the activity type you select (as long as it is an outdoor activity profile using GPS), and assuming you stay outdoors (the watch may not be able to get the signal if you are under the deck, or in the cabine).
