this is i weird answer. Instinct have MIP display and they are easier to read more light it gets. inside a darker room yes it is harder. Backlight outside in sun wont help at all.
are you sure you have a instinct and not a amoled display watch?

You can help with the by adjusting the backlight settings. If you place the brightness to higher during activities, this will make this easier to read in daylight.

are you sure you have a instinct and not a amoled display watch?
Or maybe "in daylight" means "while wearing polarized sunglasses" and having an unfortunate polarization angle?

Can you share a picture of your watch in daylight? It is very hard for me to imagine it is very difficult to see...

Backlight works in the night. During the day, the more ambient light there is, the better you can see the display. It is a passive display, and by principle, its contrast and readability increase with the light intensity.
While I am old, and need reading glasses, I indeed may have problems reading the display of the watch in twilight, but I have absolutely no problems reading it in daylight at noon, especially if it is sunny - I can read it without glasses then. So frankly told I do not understand at all, how you can have problems reading the display in daylight. Perhaps you should consider buying either a bigger watch (Instinct 2X), or a watch with active OLED display (some Forerunners, Epix 2, ...), or just wearing glasses, contact lenses, or keeping a flat Fressnel looking glass card with you
