I also unpaired the device to try and re-pair it and now it won't pair and only connects to Bluetooth
You have to remove the device from the list of Bluetooth devices, before re-pairing, and re-paring exclusively through Garmin Connect (with Instinct 2 not listed on the Bluetooth screen of the phone)
why can it be sooooo *** hard to connect a simple watch (Garmin instinct 2) with an iphone???? Id just love to send this shitwatch back.... spend more than two hours, using all advices here and from youtube videos - but nothing works....

I do not know, normally it is not hard at all, and especially with an iPhone. I recommend reaching out to the Product Support through their website at https://support.garmin.com. Use the Phone or Chat options for an instant response. Email exchanges usually take a few days.

I am sorry to hear you are having this issue. For this, there are a few steps we would recommend trying. We do not recommend pairing the watch with more than one smart device. Use these steps for pairing with the phone:
To pair again, sign into the app. And allow this to walk you through pairing. Be sure to place the watch in pairing mode.
If there is no change, I would recommend completing a factory reset:
Same issue here. Followed all steps above. Tried to connect to Oppo find x 5 and Samsung tab 5. All failed. Been trying for almost 24 hrs now without any success.
Reinstalled garmin connect
Clear cache and data
Hard shutdown the unit
Factory reset the unit
Unit is instict 2s
I used to have vivo active and was fine.
Remove the watch from all phones and tablets. Not only from Garmin Connect, but also and especially from the system Bluetooth menu of the devices. Never attempt connecting two devices at a time. Re-pair then the watch through Garmin Connect (not the BT menu of the phone/tablet !!!). Keep the BT enabled only on one of the phones/tablets at a time, when pairing (or syncing) them!
You may want disabling also other BT devices in the proximity (i.e. your older Vivo), in order to prevent interferences. Wi-Fi can interfere with BT too, since it uses the same 2.4 GHz frequencies, so if your Wi-Fi router and the phone/tables supports the 5GHz band, switch to it.

Unfortunately I did the same way as you mentioned on the first paragraph.
This is really weird and disappointing as this is the most expensive smartwatch I have ever bought. I never had similar issue with my huawei band, or oppo band which it's price was below 40 dollars.
Any update for this prob? If solved, how?
My ins2 just show initializing, and the phone show searching…….
I'm having same issue with my Instinct 2 Tactical.
I was upgrading & downgrading software version with Garmin Express from 17.01 down to 16.11 and back, but it doesn't solve anything. Watch doesn't sustain BT connection with my phone and it only appears in Garmin Connect as connected (green dot) only for few minuts, after which I have to restart watch several times before it gets connected with my phone. I was told maybe it's my phone's battery saver killing either Garmin Connect app or BT connections, but I checked it and that is definitely not the case.
One thing I know is when it doesn't want to connect in System Info under section BLE/ANT it is visible as version 0.0 whereas after few restarts it is then appearing correctly as BLE/ANT version 1.04
