I am sorry to hear you are having trouble with the sleep tracking. This will begin looking for your nightly sleep times during the sleep schedule you have selected in your Connect app or on your watch. So if your shift is regularly changing, you would need to update this in the Connect app or on the watch, with each change, to correctly track your sleep.
When I worked thirds I would program my sleep times in connect at the beginning of each work week. A bit of a pain, but it also automated the do not disturb settings.
