all those permissions - phone, contacts, calendar, sms, call logs, location - if you use your watch as a smart watch - to receive notifications or respond to calls/messages - you will need to grant them. it's logical. camera - not sure why it asks for it tbh, otherwise it all makes sense, doesn't it?
if you are concerned, remove some permissions but some watch functionalities will go away too. force stop app - you are sorted, there is no 'close' button on android apps (with rare exceptions)
just think how much you actually share with Garmin while sending all your bio-metrics and profile data to their servers anyway.
