Similarly i can go to bed but be on the phone and it won't count me as sleeping until I am actually asleep.

30-48 hrs of sleep in a day?! If so, there must be indeed some problem. Please post some screenshots demonstrating the problem.

In your case, I'd tell that you probably did not set the default Bed Time and Wake Time, or have them set to identical values hence the watch continues to poll for sleep continuously round the clock over several days. I do not know why it does not stop, but again without seeing your other daily data like the steps and the HR, it is difficult to guess. One possibility is that your activity level is quite low even during the day.
One possible way to stop the sleep detection, is by pressing the GPS button after the waking in the morning. The watch will ask you whether it should stop the sleep monitoring (you need the recent firmware v9.xx for that though).
If neither setting up the bed & wake times, neither the manual stopping do not help, then send the screenshot to Garmin Support, and let them investigating it.
