No, that doesn't work.

However, if autoupdate is switched off, the watch will not receive a firmware update from one version to the next via the connect app.

Bear in mind that autoupdate can switch itself back on when the connect app is reinstalled. The same applies to removing the watch from the app and then reconnecting it.

I help so many people to downgrade to older release, but not a specific one, it depends on your usages, some release are "stable" for 1 user when the same is full of issues because the user is using specific things, manipulation etc.

Most of users that i help do not use any third-party content before downgrading.

Seems excellent - 18 to 20 days (without activities). I run every day whilst listening to Spotify, so I'm getting around 7 days out of my base model 7. It meets my expectations.

IMHO, that the fact that non-technical users want to go back to the old version is a big failure for a company that advertises its watches as a “premium product.” 

If I were to buy another watch, I'd go for an older version so that I would have access to the earlier releases. A new beta hasn't showed up in a while which is a bit longer than normal so maybe they are thinking things over. I worked at a software company back in the prior century and we had a similar crisis. Management traveled to Japan to talk to software companies over there and we learned a lot and brought back a lot of their methods and implemented them and that solved our quality issues. It's process and training - not something particularly magical.
