At FW 17.20 and now also in 17.23, Garmin announced "Renamed 'Climb' sport to 'Mountaineering.'" in the changelog.
I am now at 17.23 and I cannot find neither 'Climb', nor 'Mountaineering' in the list of activities. Does anyone see any of these?

Fenix 7 Solar on 17.23: It's there, go to Add activity, open section Outdoor, second position: "Mountaineering", right after "Golf"
OK, then I can see the issue.
My Outdoor section offers (in this order): Hike, Golf, Hike, Fish, ...
with the second Hike having different icon, so I guess the Climb got renamed to Hike for some reason instead of Mountaineering. I haven't touched that for sure.
Yes, that is the icon I have for Mountaineering. I guess I don't have Hike there because it's already selected as a favourite.

And yes, activities that are already added in the main activities menu, are not shown under "Add +" anymore.
Why wasn't a separate climb activity profile added? How does Garmin expect people to record sport and trad climbing?
True, Garmin does not have any activity intended for outdoor rock climbing (or even separate between sports and traditional climbing). There is only Climb Indoor and Bouldering, both without recording GPS.
The question is - would it make sense to record GPS during outdoor rock climbing? As most of the movement is vertical and the GPS recording with its natural jitter would just end up as a big mess, then maybe not.
I personally just copied the Climb Indoor activity and renamed it to Climb Outdoor to distinguish between being inside and outside. But then the "category" still end up as "Indoor Climbing", as this is adopted from the original activity and it cannot be changed. And there is even no Outdoor climbing category in the list.
So still there could be many little improvements made by Garmin, you can try to propose a new idea to Garmin and see if they consider it important. I tried that many times and all my ideas were just ... ignored :)
Can the activity after recording as climb indoor not even be changed in Garmin Connect as ‚climb‘? I always use the ‚other‘ category to record climbing activities (gps turned off) and change category manually.
I think we are now pretty off-topic, the original post was about renaming Climb (meaning hiking in mountains) to Mountaineering. Climbing (on rock) should be discussed in a different thread.
There's already a hike activity. Climbing needs to be listed as a separate activity.
Yes climbing outdoors should be a separate activity with GPS. Since it's a separate activity Garmin could record GPS data differently or make tweaks to record locations better.
Garmin shouldn't expect people to modify existing activities for something as common as rock climbing outdoors when they go through the trouble of creating a jump rope activity.
