the main question might be what specifically would you want a watch to measure while fencing or do you just want a basic cardio activity pre-named? Anyway, suggestions as mention above (but I would not hold your breath)

I think cardio should definitely be included. It's just a warm-up phase of about 20 minutes. Then there is footwork of about 20 minutes, then the actual fencing takes about 40 minutes. and final part or stretching approx. 10min.
I don’t fence but it sounds like you are not asking for anything specific to the sport that would need development work. Why not just copy a cardio (or similar) activity , adjust the data files if desired, and name it “Fencing”?
I did the same thing with Instinct 2. Now I have Fenix 7 and I forgot how I did it. It would be an advantage if I didn't have to do anything, but just choose the training and get started.

Activity Settings > Copy Activity > Rename to 'Fencing'
I'd first suggest Fencing was added in the category list under Other and then ask for a way that within the activity's settings a sub-category could be chosen by default to avoid adding Fencing to an activity in Connect everytime it's done. That certainly was one of the most tedious for me —thankfully now Inline Skating has it's own activity and no longer needs to be set in Garmin Connect.
