Every day I walk my dog for 15 intense minutes to a park, and another 15 minutes back home. MoveIQ is on. Only one time in the last few months I've seen a walk added to My Day without me starting the walk activity. And that auto walk can't be find in activities or calendar, it was just for a day in "Yesterday" summary on my Connect app. Any clues why I can't find it and why MoveIQ does not work for these walks?

MoveIQ will only mark a walk in your daily timeline, it won't actually record an activity that can be viewed later in activities or calendar. You have to actually start an activity for that.
