Came here for this. I've paid a lot of money to professionally have my exact heart rate zones decided, and now I can't decently enter them?

My 1-st LTHR (about 2mmol) 139-140 (±1) ALWAYS!
My 2-nd LTHR (about 4 mmol) must be from 164 -170 (±6)

While very inconvenient it is not difficult to convert bpm to %age but we shouldn't have to do that.
The option appears to have been removed from the Enduro/Epix/F7 watches but remains on the Instinct 2 series, (which are also in the Outdoor watches stable) and elsewhere.
The level of precision using %ages is sufficient for HR training. Most people's HR will fluctuate at least +/- 5bpm from a target even in a perceived steady state.
Heart rate zones are based on percentage, not BPM. The only BPM measurements you need are max heart rate, lactate threshold, and resting heart rate to do heart rate training.
You can do a little math and adjust your zone percentages accordingly.
System with percentage is more flexible.
Your ax HR and LTHR will change in time, if you put your zones as BPM you will need to change it all the time when something with your HR will change.
Putting it as percentage will adjust it automatically.
From my point of view it is easiest and more convenient, and converting number to percentage is a simple math.
Of course, and you don't need watchs, put a stick on the ground and look at its shadow: here you have hours. If I have an instrument I hope it does math, no me.
